I made this on December 29. Perfect dish mild taste. The poblano peppers are a fantastic add to the recipe.
Sour cream is a perfect topping to bring all the flavors together.
1 Tbsp olive oil
1 medium red onion, chopped
3 garlic cloves, minced
2 large poblano peppers (remove seeds and white veins)
1 jalapeño chili peppers (1 for mild, 2 or more for spicy), seeded, minced
3 cups cooked turkey meat, chopped
1 15-ounce can black beans, rinsed and drained
Cheddar cheese, grated (makes 2 cups grated cheese)
1/4 cup chopped fresh cilantro
2 Tbsp lime juice (can sub lemon juice)
1 to 2 teaspoons salt or more to taste
Corn tortillas
Directions:
1. Saute onion 2 minutes + add garlic saute 1 minute
2. Add poblano peppers and jalapeno COOK TOGETHER UNTIL SOFT
Set Aside
Bowl One: In a separate bowl add black beans a dash of salt, 1 tsp. chili pepper warm in microwave oven 2 minutes.
Bowl Two: Add turkey-chicken, cilantro, lime and a dash of salt.
Bowl Three: Add the sauteed onion/garlic mixture ( this mixture is awesome)
Fill corn tacos, top with ch. cheese and sour cream ( add more cilantro if needed)
Garnishes:
sour cream
Ice berg lettuce
Chopped red onion
Chopped avocado
Chopped fresh cilantro
