9 tomatillos, husked
1/2 cup red onion, chopped
1/3 cup chopped fresh cilantro
1.5 garlic cloves
1 Serrano Pepper (take out seeds and veins to reduce heat)
Salt and pepper
Juice of 1 lime
1 teaspoon olive oil
1 TBS sugar
1/8 teaspoon ground cumin
+ 1/4 teaspoon garlic powder


1. In a medium pot over medium heat place the tomatillos in water. Cook for about 5 minutes or until tender.

2. Place the cooked tomatillos and remaining ingredients in the food processor and process until smooth.

3. Allow 30-40 min. to cool. Flavor comes together in the cooling process.
